Over the weekend, Dan and I made enchiladas! From scratch! Sorta. We wanted to make the tortilla wrap thing ourselves but couldn't find the appropriate flour :/ Oh well. We did make the filling from scratch though but that wasn't too complicated. We used this recipe, which is for enchiladas verde but we didn't have tomatillos so we just kinda tweaked it.
