So, this baked chicken thing is by far the easiest thing I know how to make and you get perfectly cooked chicken every time. It's practically all I ate in my second year other than frozen battered fish from Iceland (I know, how could I, but I did).
I alternated between the two every day and had them with some boiled vegetables with butter. This was when I really didn't know how to cook much else other than pasta and a variety of egg things.
This was a time when cereal for dinner was not uncommon. I didn't even know how to make fried rice properly - you can ask Pris haha. I invited her over for dinner and ended up having to ask her and our friend Phebe how to cook it. What a loser.
ANYWAY!
All you do is preheat your oven to 200°C. Rub some olive oil or whatever oil on your chicken breast. Season it with whatever you want - I usually use salt, pepper, Italian Herb (my other 'secret' ingredient) and balsamic vinegar. Put it in the oven for 20-25 minutes depending on how big the chicken breasts are and hey presto - baked chicken :D.
I promise I never get pink flesh in the middle if I use chicken breast. You can just estimate the time depending on the size of the chicken. I actually got the time to bake the chicken off the frozen fish box, as the chicken fillet was about the same size as the fish fillet.
We also made wedges - these are also pretty easy. I just cut the potato into... wedges... and then poured a bit of oil in and covered them with some cajun spice mix that came out of a packet. I think you can just use whatever spice or herb you want.
Potatoes take a bit longer so they went in for 40 minutes and about halfway you put the chicken in with the wedges. Another, 20 minutes and everything's ready to eat at the same time. Hurray!
For this baked chicken, when seasoning, we squeezed some lemon juice on top and placed a slice of lemon on it because we wanted lemony baked chicken.
So yeah, I just felt like sharing this because I think it was the thing that got me thinking cooking is actually pretty easy, and you can kind of just season stuff the way you want to.
I think it's pretty hard to make stuff taste bad unless you're mixing ice-cream with chicken or something... Ew. Yeah, don't do that. But otherwise, if you're like I was in the second year, just give cooking a go. It's quite fun and anyway, cereal for dinner gets pretty boring after a while.
