Egg Cocottes

Hello one and all!

It's been a while, I hope you are all well. It's coming to the end of my third year. Update: Still up to my eyeballs in work but well, things are going alright I think :)

It's been an exciting three years to say the least, and now I guess I'm just getting ready for it all to come to a close. Summer holidays are being planned and I look forward to going home and seeing my family.

Been pretty busy with work but I thought, this blog needed an update so here it is folks. I present egg cocottes! The first time I saw this recipe was on Rachel Khoo's Little Paris Kitchen where she calls it Oeufs en Cocotte.

Which pretty much just means eggs in pots - so I've gone for a hybrid English/French title ie. Egg Cocottes. And of course, I got the recipe from Sorted haha. Seriously, they should pay me to do their PR :P


Here we cooked up some mushrooms, bacon and onions in crème fraîche. YUM. Love mushrooms. 


There is something very satisfying about cracking an egg perfectly. Do you ever get that feeling? 


So it's quite straight forward to make. Just the mushroom thing as the bottom layer, crack an egg in and then some chopped tomatoes and a dollop of crème fraîche on top. Finally, sprinkle a bit of salt and pepper over the top. I think it looks quite pretty :) 


Time for the bain-marie.


Which is really just a fancy term for water bath haha.


And 15 minutes later...


Tadaa!
