Turkey Burgers

Hello one and all! Read on to see what Dan has to say about Turkey Burgers and why he's fallen out with Bob. Merry Christmas to all and Happy Eating! 

This is Bob Belcher of 'Bob's Burgers'. I like Bob Belcher, but he once said "there is no such thing as a turkey burger"... and i wasn't so sure about that.

 So in defence, i made some turkey burgers. I've never made turkey burgers before so i didn't know what to expect... a turkey burger would be a good guess but i don't like to assume when i'm cooking.



This is a turkey burger, so you're wrong already, Bob.


That's right, Feta cheese. You could put any cheese you want on these burgers, but i had Feta to spare so feta it was.

(There's a burger on Bob's Burgers called the 'Never Been Feta' burger... but he denied the existence of Turkey Burgers so who cares.)

The Bun: I, like many of my friends, rate a burger on how well the bun holds up.

Brioche bun - Looks good, but it crumbles and you're just left holding a piece of meat. Forget it, Brioche.

Sesame seed bun - It doesn't quite fall to bits like Brioche does but it shrinks, leading to a bad burger:bun ratio. Nope.

So, i went for the ciabatta. "Oh but it's square and a burger is round" i here you scream. Shut up. It's perfect, it's a toasted haven for any burger.


So there you have it (Yes, i had 2). Turkey Burgers do exist and they're surprisingly nice. I'll be making them again, i would recommend you do the same.


Here's the original recipe, tweak as you see fit :) 

You will need
  • turkey thigh mince (500g)
  • 1 red onion
  • 2 cloves of garlic
  • a small handful of black olives
  • a handful of fresh parsley
  • a handful of fresh basil
  • a small handful of breadcrumbs
  • 1 egg yolk
  • a chunk of feta cheese
  • ¼ of a cucumber
  • a handful of fresh mint
  • Greek yoghurt (150g)
  • a drizzle of olive oil
  • 1/2 a lemon
  • 6 small brioche buns
  • 1 avocado
  • 2 small ring cutters (~7cm and ~8cm, optional)
Recipe
  1. Chuck the turkey mince into a large bowl.
  2. Dice the peeled onion and garlic as fine as possible, then chop up the black olives, fresh parsley and basil.
  3. Add them into the bowl with the mince with the breadcrumbs and egg yolk then mix well.
  4. Ahape the meat into balls, then press the balls into flat patties, using a ring cutter to measure the size.
  5. Preheat the oven to 180ÂșC.
  6. Heat a griddle pan until very hot. Brush the burgers with a little oil and press firmly onto the griddle.
  7. Cook the burgers for a few minutes on each side to get grill marks, then place on a baking tray.
  8. Crumble the feta over the top of the burgers and place in the oven for 5 minutes.
  9. Slice the buns in half and place on the griddle until browned and slightly crisp.
  10. Chop the cucumber up very small, leaving the centre core to one side.
  11. Tear up the mint and chuck it in a bowl with the cucumber, yoghurt, olive oil and lemon juice.
  12. Mix everything together.
  13. Halve the avocado and carefully remove the stone.
  14. Scoop out the flesh and slice, along with the tomato.
  15. Cut the buns with the smaller ring cuttter.
  16. Place some avocado slices onto the bottom of the bun.
  17. Place a burger onto the avocado and top with a dollop of the tzatziki and the lid of the bun then serve.
